FullProtect is a blend of specific yeast derivative and antioxidant gallic tannin. The specific yeast derivative has been selected for its ability to stabilise aroma compounds and protect juice (& wine) from premature development due to the effects of oxidation and enhanced mouthfeel.
The highly reactive gallic tannin protects from oxidative reactions and works synergistically with the specific yeast derivative to provide further protection from secondary oxidation reactions, enhancing aromatics and improving wine longevity while also enhancing mouthfeel.
FullProtect can be added to harvested grapes, at the crusher or juice post pressing and supports low SO2 additions.
